Emacs with Nxml-mode! It's available for Linux/Unix, Mac, and Windows.
Emacs is rock-steady, Nxml-mode *rarely* crashes, though its
validate-as-you-go method can slow you down when editing very large
files. And of course there is the usual complaint about Emacs: you have
to learn (gasp!) keyboard commands.
