Time and practice. The fact is, it is a skill you will rarely use but when
you need to use it you need to be good at it.  I took my mask off at 60 feet
yesterday to adjust my equipment.  One of the other divers commented after
the dive that she could not have done that.  Find a friendly DM that will
work with you to master the skill. Avoiding panic is really a matter of
getting comfortable in the water and realizing that you can breath with or
without a mask.
